Ginger Bats
Gingerbat!
Procedure
You might want to find a bat-shaped cookie cutter for these; they’re a little difficult to cut free-hand.
Preheat oven to 350.
Blend until creamy:
- 1/4 cup butter
- 1/2 cup brown sugar (white is ok)
Beat in
Sift together
- 3-1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon cloves (I like twice this amount; experiment!)
- 1/2 teaspoon cinnamon (ditto)
- 1 teaspoon ginger (ditto)
- 1/2 teaspoon salt
Add the dry ingredients to the butter and sugar in three or four parts, alternating with
Work the last bits of flour in by kneading lightly.
Roll the dough out on a board to about 1/4 inch thick, cut into bat shapes, and place them on a greased cookie pan. Mix the trimmings gently back together again and roll out more bats.
Cook for about eight minutes, or until the dough springs back when you press it with a finger. Cool on a rack.
Decorate these bats as appropriate – mine got black icing outlines.
